An omelet for a change

I’m going to try to be more ovo-vegetarian in my food choices. As my mom pointed out, veggies are cheaper than meat so it should be a more economical way of eating. Anyways, here is my first stab at this lifestyle in an omelet that I made today.
Omelet
3 eggs
1/2 green bell pepper, diced
2 cloves garlic, minced
~1/5 large onion, diced
black olives, sliced
green olives, sliced
cheddar cheese
2 tbsp lactose free milk (what can I saw, I’m not down with lactose)
1 tbsp butter
The first thing I did was to crack three eggs in a bowl and start whisking them. Looking around the internet it seemed that a lot of recipes recommended adding a couple of tbsp of milk, so I did just that.I set that aside for a while and using a medium sized pan on a medium heat I dropped some butter in there and let it cover the entirety of the pan. While this was melting I chopped up the vegetables and then sauteed them in the pan. I then set those aside on the plate I would be using and began making the omelet. I put a tab more butter in the pan and once it was melted dumped the eggs in it.
It has been a long time since I’ve made an omelet so I watched a couple of videos online to make sure I was doing it right. The first video suggested cooking the bottom, pouring on all of your ingredients and then sticking the omelet in the broiler. I wasn’t very keen on that idea. A couple more videos showed a much better method: using a fork or spatula pull the eggs towards the inside letting more liquid egg touch the pan. I did this for a a few minutes and then started pouring the ingredients on top. I start with the cheese. It is best to shred the cheese as it will melt a little easier than slices of cheese. Then basically once the cheese was melted I attempted to fold it over onto the plate. It didn’t work out exactly as I had hoped but it was pretty tasty.

You know, since Christie is a vegetarian, I’ve stopped eating meat every day. And it’s not bad. Veggies can be really good if you experiment with different ones. You might cruise the bookstore & look at some veggie cookbooks, they have some really good receipes in them.

Yeah, I thought about it and at first i was thinking it wouldn’t be that difficult to cut out meat on a regular basis. My only weakness is tacos and burritos. But if I am eating out it may be a little more difficult. I’m thinking about trying to make a veggie burger.

I love tacos & burritos, too. As for the veggie burger, the black bean patties from Morningstar are good, but I’m not sure how they stand vs. the cost of meat. But, I (and Christie) have had some pretty good veggie patties. In New Jersey, Christie had a patty made out of falafel, and she said it was pretty good…
